Much like a quiche, this pie uses cheese to form its crust.

  • 2 pkgs chopped spinach - cooked and drained (3 pkgs if using deep dish pie pan)
  • 1 lb ricotta cheese
  • 2 eggs
  • 3 teaspoons minced onion
  • salt and pepper to taste
  • 1 lb muenster cheese
Recipe:
  1. Preheat oven to 350 degrees
  2. Mix ricotta, eggs, onion, salt and pepper with well-drained spinach
  3. Spray pie pan with Pam
  4. Layer half of the muenster cheese in bottom and up sides of the pan
  5. Add filling
  6. Put remaining cheese on top
  7. Bake in 350 degree oven, 20 to 30 minutes, until lightly browned on top
Variation: Add 1 lb browned and drained chopped meat to filling for a complete meal
