Much like a quiche, this pie uses cheese to form its crust.
- 2 pkgs chopped spinach - cooked and drained (3 pkgs if using deep dish pie pan)

1 lb ricotta cheese
- 2 eggs
- 3 teaspoons minced onion
- salt and pepper to taste
- 1 lb muenster cheese
Recipe:
- Preheat oven to 350 degrees
- Mix ricotta, eggs, onion, salt and pepper with well-drained spinach
- Spray pie pan with Pam
- Layer half of the muenster cheese in bottom and up sides of the pan
- Add filling
- Put remaining cheese on top
- Bake in 350 degree oven, 20 to 30 minutes, until lightly browned on top
Variation: Add 1 lb browned and drained chopped meat
to filling for a complete meal
