In 1969, the Heinz corporation published a free recipe booklet called "Spotlight On Salads". Those recipes ranged from "not exactly to my taste" to truly excellant. The best of these, in my humble opinion, is the Blue Cheese Dressing. The Creamy Onion Dressing is also good, though not as tangy as the Blue Cheese.

An obvious word of caution: USE THE BEST INGREDIENTS THAT YOU CAN FIND. This recipe highlights the flavor of the blue cheese, so, if you use a cheese that doesn't taste good, your dressing will be AWFUL!

  • I package (3 ounces) cream cheese, softened
  • 1 cup mayonnaise or salad dressing
  • 1/8 teaspoon salt
  • Few drops hot pepper sauce
  • 1/4 to 1/3 cup Heinz Apple Cider or Salad Vinegar
  • I package (4 ounces) blue cheese, crumbled

Recipe:

  1. Beat first 4 ingredients together until smooth.
  2. Slowly stir in Vinegar, then crumbled cheese.
  3. Cover; chill.

Serve over lettuce wedges or tossed salad. Makes 2 cups.
Note: Dressing may be thinned with milk, if desired.
Personal Note: I really like blue cheese and tend to use double the amount called for. I also use a blender and put half of the blue cheese in to be blended well, before adding the remainder which provides texture.
